1 Introduction Perfume compound, also known as blended fragrance, is a mixture of various fragrances prepared by hand, with a specific fragrance type. Flavors and fragrances can be used to improve, increase and imitate the aroma and aroma of food; can be used as food additives. The composition of flavors is complex. In the past, the detection of flavors mainly relied on some conventional physical and chemical methods, which was not only slow, but also difficult to clarify the composition. However, the appearance of the GC-MS has solved these problems. It has made the analysis of flavors and fragrances from the separation of components to the identification of chemical structures truly convenient, fast and accurate. The use of GC-MS can achieve both qualitative and quantitative purposes, thereby monitoring the quality of fragrances, guiding the improvement of flavors and fragrances, and making significant contributions to the synthesis of new flavors and fragrances.
